HCA, Hospital Corporation of America Chef Supervisor, Food & Nutrition Services in Dallas, Texas


  • Responsible for overseeing the daily food production operations for the Room Service program, specialized catering events, Physicians Dining Room, Cafeteria and catering.

  • Ensures that food items are prepared according to HACCP and regulatory agency standards. Maintains high standards of quality, safety and sanitation.

  • Maintains all food preparation, display and service areas, in compliance with all regulatory standards, e.g. JCAHO, Medicare, Texas Department of Health and City Health Department of Dallas.

  • Acts as a liaison during Health Inspections.

  • Responsible for overseeing & assisting with purchasing of food & supplies, menu development and coordination of large catered events.

  • Utilizes cost controls to effectively maintain inventory, minimize waste & meet financial requirements.

  • Complies with purchasing contracts to meet compliance expectations, makes recommendations for food & supply items to maximize rebates and reduce waste.

  • Serves as a resource for community events and hospital wide public speaking.

  • Serves as a preceptor for Externships for Culinary Students.

  • Represents the hospital in Culinary Competitions as needed.


  • Associate‚Äôs Degree from an accredited Culinary Arts Program required.

  • Minimum of 5 years professional culinary leadership experience.

  • Experience in a fast paced large scale setting, fine dining restaurant, hotel or country club.

  • Healthcare Experience a plus

  • Comprehensive knowledge of food & catering trends with focus on quality, sanitation, production & presentation.

  • Experience in Public Speaking preferred

  • Experience in Budgeting and cost controls


  • Completion of a culinary arts program from an accredited institution.

  • ACF Certification required within 18 months

  • Active Member of the ACF preferred

  • Food Service Handlers certification through the Texas Department of Health preferred but required after 1 year of employment.
