REPORTS TO: Head Cook SCOPE OF POSITION: Under the direction of the Head Cook the Cook performs a variety of tasks and duties which include preparing, seasoning and cooking. DUTIES AND RESPONSIBILITIES: The following are examples only and are not intended to be all inclusive or restrictive; other duties may be assigned as necessary. Performs all functions in accordance with applicable Tribal, Federal and other laws and gaming regulations and Kickapoo Lucky Eagle policies and procedures. Ensures the highest possible standards of guest service are provided and listens and responds to guest and employee concerns and questions. Responsible for the timely and clean servicing of all menu items to the servers. Ensures each order is prepared in uniform and consistent with approved recipes, practices portion control and strives to control waste. Controls food production to include proper cooking methods, cooking time and temperatures and ensures sanitation practices are followed closely. Properly labels and dates all food items placed in refrigeration coolers will rotating items appropriately. Maintains a sanitized and organized work station free of debris at all times during shift. Removes meat, poultry, seafood and other frozen items from freezer to meet the demands of the business. Organizes the work day and ensures daily goals are met. Reports any injuries immediately and practices proper hand washing and sanitation guidelines. Position requires familiarity with department's standard operating procedures. Prepares food for special events or caters for meetings when assigned. Attends and satisfactorily completes all required training as assigned and required. Performs other duties as assigned. REQUIRED QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential job duty satisfactorily. Must be at least 18 years of age. Ability to be present at work for assigned schedule including, nights, weekends, holidays and extended hours when required. Must be able to work long hours under stressful conditions. Must be able to withstand below freezing temperatures when working in freezers. Must be able to withstand high temperature of 100 degrees when cooking at grill, flat top griddle, and stove top or when using other cooking equipment. Able to lift up to 40 lbs. Ability to define problems collects data, establish facts, and draw conclusions. Ability to understand complex instructions and material. EDUCATION AND EXPERIENCE: High School Diploma or G.E.D. preferred. Must have at least six (6) months experience in a high-volume commercial kitchen setting. MATHEMATICAL SKILLS: Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions and decimals. LANGUAGE SKILLS: Excellent English oral and written communication skills. Spanish or other language skills a plus. EMPLOYMENT AUTHORIZATION: Must be able to provide authorization to work in the United States. Required to obtain and maintain a gaming license from the KTTT Gaming Commission. Responsible to keep all documents current and valid at all times. Kickapoo Tribe or other Tribal preference preferred.
